Chocolate Avocado Pudding
You might just want to tell people tasting this that it's "chocolate pudding".
Telling them it has avocado in it might throw them for a loop.

This dessert uses the healthy fats from avocado, plus its creaminess, to replace dairy as a pudding base. It's
also an egg free dish, which makes it perfect for people with egg and dairy allergies.

Chocolate Avocado Pudding (Recipe): Serves 4
- 3 avocados (should be firm, yet yielding to a light squeeze--just ripe enough)
- 6 Tbsp cocoa powder
- 1/4 cup raw honey (this is honey that has not been heat pasturized)
- 1 tsp pure vanilla extract
- Sea salt (I like Celtic sea salt--or a coarse grain sea salt for this)
Puree the avocados, cocao powder, honey and vanilla in a food processor. Pulse until the mixture is smooth and
pudding-like.
Spoon the mixture into four serving dishes, and top with a sprinkle of sea salt to add a dash of flavor to
the pudding.
Serve and enjoy. Or chill the pudding dishes, covered, for 1-2 hours before serving.
